THE MOST DELICIOUS CRANBERRY COOKIES

It’s the perfect time of year to make delicious cookies. This cranberry cookie is so tasty and filled with other yummy ingredients. It makes the perfect gift for someone this holiday season too! Keep reading for more!

INGREDIENTS FOR CRANBERY COOKIES


SWEET DRIED CRANBERRIES- Delicious chewy and sweet cranberries. These are the star of the cookie and add the perfect added texture and tangy sweet flavor.

CHOCOLATE CHIPS- I prefer dark for this recipe. You can also do white chocolate, but dark adds a more complex flavor.

WALNUTS- I love this specific nut for this cookie. They make a perfect pairing with the cranberries.

ORANGE ZEST- This adds a delicious brightness to the cookie.


HOW TO MAKE THESE COOKIES AS A GIFT IN A JAR

  • Use a Ball® Wide Mouth Quart Jar to make it easy to funnel ingredients in.

  • Clean your jar and ensure it is dry before preparing. Use a funnel or canning funnel to pour contents into jar.

  • Add ingredients in the specific order listed.

  • After adding each layer be sure to tap the jar and use a muddler to flatten out the contents as much as possible to get clean lines between each ingredient. This makes it look really beautiful.

  • By the time you get to the walnut layer if you used a quart-sized mason jar, your ingredients will almost reach the top.

  • Next you will finish with the sugar. However, when making the recipe it’s best to cream the sugar and butter first so add a layer of cling wrap first, pour the sugar into it, push it down and to the sides, then twist the cling wrap before putting the lid and ring on.

  • When making the cookies you simply have to pour ingredients out of the jar into a mixing bowl, add wet ingredients, mix, and you are ready to bake!

TIPS FOR MAKING THE COOKIES

  • Mix butter and sugar first with electric mixer. This helps bring some air into the recipes and helps the cookies rise.

  • Mix ingredients well. Add the orange zest last before you mix it one last time.

  • Do not overcook.

  • Store in an airtight container for freshness.

RECIPE

INGREDIENTS

  • 1.25 cups flour

  • 1.2 tsp baking powder

  • 1 tsp cinnamon

  • 1/4 tsp baking soda

  • Pinch of salt

  • 1/2 cup brown sugar

  • 1 cup dried cranberries

  • 1/2 cup dark chocolate chips

  • 1.2 cup chopped walnuts

  • 1.2 cup white sugar

  • 4 tbsp room temp plant-based butter ( or desired butter)

  • 2 tbsp almond milk ( or desired milk)

  • Equivalent of 1 egg ( I use Ener-G egg replacer

  • 1 tbsp vanilla extract

INSTRUCTIONS

  • Cream together the butter and white sugar until very fluffy.

  • Next, add the milk, vanilla, egg and combine with mixer.

  • Then, thoroughly mix with dry ingredients until fully mixed.

  • Drop or roll large teaspoon-fulls of dough onto a greased (or parchment papered) baking sheet. Flatten the cookies a little bit.

  • Bake at 375* for 12-16 minutes, or until the color has tanned a bit on top and browned around the edges. I bake for about 13 minutes to ensure they don’t overcook and end ups a bit chewy.

  • Ball® Wide Mouth Quart Jar for ingredients if giving cookies as a gift. Mixture should then be poured out onto a mixing bowl before mixing with wet ingredients then baking.
