Pickled Red Onions With Balsamic Vinegar And Maple Syrup

Have you ever tried (and made) pickled red onions, friend?

If not, you’re missing out!

I'm excited to share with you my go-to recipe for homemade pickled red onions!

With just a handful of simple ingredients – like vibrant red onions, aromatic herbs, maple syrup, and balsamic vinegar – it’s very easy to make and so tasty.

Pickled red onions are incredibly versatile and a pantry must-have. They go great with tacos, salads, sandwiches, served on crackers, or just snacking straight from the jar (guilty!).

I love that the maple syrup and balsamic vinegar give these pickled red onions a bit of a deeper, more intense flavor and color as opposed to standard sugar and vinegar.

Best of all? You can enjoy this already after only 1 hour if you slice the onions very thinly! However, if you can wait, it is best to let them marinate overnight before enjoying them.

ingredients:

  • 2 medium red onions or 1 large, peeled and sliced

  • 1 tsp peppercorns

  • 1 tsp dried Italian herbs

  • 3/4 cup balsamic vinegar

  • 3/4 cup water

  • 1/2 tsp salt

  • 1/4 tsp red pepper flakes

  • 2-3 tbsp maple syrup

  • 1 sprig of fresh thyme

directions:

  • Thinly slice the onion and transfer it to your preferred glass container.

  • Add the peppercorns and set aside

  • In a small pot, add the balsamic vinegar, water, maple syrup, herbs, and salt.

  • Stir well and bring to a simmer. Then, remove from the heat.

  • Pour the steamy hot vinegar mixture over the onions and seal the jar.

  • Shake the jar a few times and let it cool down on the counter for about one hour before placing it in the fridge.
