Cuban Picadillo

Cuban Picadillo 

Ingredients:

1 package Gardein burger crumbles (you can use 3 cups of cooked Lentils instead)

1 medium onion chopped ( I like to use red, but a traditional recipe includes yellow onion) 

1/2 green bell pepper chopped ( or 1 small bell pepper) 

3-4 gloves of garlic (minced)

1 Tbs Oregano 

1 Tbs Cumin 

A couple bay leaves 

1 Tbs Adobo seasoning 

1 8 ounce can of tomato paste 

2 large spoonfuls of green olives with pimento 

1 large spoonfuls of raisins

Salt to taste 

1 teaspoon olive oil 

Coconut oil to cook with. 



Directions:

Heat coconut oil over medium heat and cook onions first then add bell pepper and garlic. When mostly cooked add tomato paste and a Tbs of water to help dissolve it.  Add the burger crumbles and all the seasonings


Cook for about 5 min, mixing thoroughly. Then add raising and olives. Continue to cook together for another 5 min or so. If too dry add another Tbs of water. Once all cooked together add olive oil. 


You can use olive oil to saute in but I prefer coconut oil when cooking at higher temperatures.  

Eat the piccadillo alone or serve over rice! It’s very tasty also with a side of sliced tomato and avocado!
