Creamy Kale Salad

INGREDIENTS

SALAD

1 package of baby kale or 2 large bunches of regular kale. Chopped 

1/2 cup golden raisins 

1/2 cup pistachios ( salted) 

Zest of 1 lemon 

1 Tbs nutritional yeast


DRESSING 

3 Tbs Fresh lemon juice ( about 3 lemons) 

1 Tbs apple cider vinegar

1/4 cup olive oil 

2 Tbs maple syrup

1/2 tsp salt

1/2 a large avocado. ( or 1 whole small avocado) 

1 tsp olive oil to prep the kale. 

DIRECTIONS

Wash kale before serving. 

Place in a salad bowl and drizzle with 1 tsp olive oil. Move the leaves around in your hands so they are coated a little bit. Lightly sprinkle with salt. 

Mix dressing together. If a more liquid dressing is desired add a bit more lemon or olive oil depending how tangy you want it. Or, omit the avocado all together for a vinaigrette instead of a creamy dressing.

Pour evenly onto kale and mix very well so all the laves are coated in dressing. Sprinkle with raisins and pistachios. Sprinkle with nutritional yeast to serve. 

Enjoy! This salad can be made with slivered almonds or pecans instead of pistachios. It can also be made without the avocado for more of a regular vinaigrette type dressing vs a creamy  one. Another delicious addition is some vegan parmesan. Sprinkle it on top when serving! I like Violife’s parmesan.
