Fresh Summer Low Sugar Strawberry Freezer Jam with Ball® Canning

There’s nothing better than juicy fresh strawberries! Their sweet flavor is so wonderful and a delicious treat any time of the day. Living on our farm I love being able to pick fresh berries at the peak of their season! I hope to start a tradition with Ava to pick berries every year together then make something delicious in the kitchen!

Even more delicious than the berry straight from the plant? Fresh jam on bread. This yummy and easy to make Low Sugar Strawberry Freezer Jam is sure to please. With no added sugar and lots of fresh strawberries, it’s a wonderful treat you can make that will last you all year!

There is something magical about preserving food. I think it’s because many times it’s something you can share with other’s as well. My little kitchen helper! Ava is always near and she enjoyed nibbling on some of the strawberries while I got everything ready.

We don’t eat a lot of sugar here at home so this jam recipe is the perfect one for our family! I used local raw honey, delicious unsweetened apple juice, and crushed strawberries. Ball® Canning has a wonderful low to no sugar pectin which works amazingly and give the jam a perfect texture.

Before I start I ensure I have all the needed essentials in place! I first wash all the jars to make sure they are clean and ready to use! I also have my ingredients measured out. This helps things move along nicely once I start making the recipe.

This recipe really is quite simple and easy to make! I start by just boiling the apple juice with the pectin.

Then add the strawberries and honey! Mix well and follow the rest of the instructions.

Once it’s ready place the warm jam into clean containers. Always ensure you measure the adequate headspace the recipe calls for. Ball® Canning has a wonderful tool for this which makes it easy to measure.

Loosely apply lid and set in the refrigerator for at least a few hours. Once the jam is set you can eat it right away or freeze the jam.

low-sugar strawberry freezer jam recipe

ingredients

  • 3 cups crushed strawberries (about 3-1 lb containers)

  • 1-3/4 cups unsweetened cranberry-raspberry or apple juice ( I used apple juice)

  • 3 Tbsp Ball® RealFruit™ Low or No-Sugar Needed Pectin

  • Up to 3 cups sugar, 1-1/2 cups granular no calorie sweetener, 3/4 to 1 cup honey ( I used 3/4 cup of honey)

DIRECTIONS

  1. Gradually whisk pectin into fruit juice until dissolved. Bring to a full rolling boil that cannot be stirred down, over medium-high heat, stirring frequently. Boil hard 1 minute, stirring constantly. Remove from heat.

  2. Immediately add prepared fruit into hot pectin mixture. Stir vigorously for 1 minute. Stir in your choice of sweetener. ( I used honey)

  3. Ladle freezer jam into clean jars leaving a ½ inch headspace. Loosely apply lids and let jam stand in refrigerator until set, but no longer than 24 hours. Serve immediately, refrigerate up to 3 weeks or freeze up to 1 year.

That’s it! Super simple, quick, and easy! The perfect jam to give to a friend too!
