January is the perfect time to kick off the year on the right note with healthier food choices, habits, and new aspirations or resolutions. The new calendar year creates a sense that we have a fresh start - we can close a chapter and try again.

And what better way to eat healthier than with fresh, farm-to-table salads that combine essential proteins, carbohydrates, fiber, and vitamins!

Anju Pear Salad With Balsamic Vinaigrette Recipe

Long gone are the days of salads consisting of only greens, tomatoes, and cucumber! These kinds make you quickly ditch the new year, new me resolution ;-) Although don’t get me wrong, I love me some cucumbers and tomatoes.

Instead, making exciting, interesting salads with various ingredients is much more appealing and enjoyable, and you’ll actually keep on eating healthier!

Salads that include protein such as nuts or beans; starchy vegetables and fruit like butternut, beet, pear, and apple; and heart-healthy fats such as avocado and olive oil will keep you fuller for longer and feeling satisfied.

This salad offers everything you need:

Arugula - Spicy green leaves which are high in antioxidants, fiber, and phytochemicals.

Pears - Delicious Anjou pears provide just the right amount of sweetness with essential minerals, vitamins, fiber, and carbohydrates.

Feta and pistachios - Two delicious plant-based protein sources for that soft and crunchy texture.

Pomegranates, red onions, and a delicious dressing - Extra toppings to bring it all together!

I absolutely love these pears from Super Fresh Growers. So delicious , crunchy, and sweet.

INGREDIENTS:

FOR THE SALAD:

6 Cups arugula

3 Anju pears

Pearls from 1 pomegranate

1/2 a red onion, sliced

8 ounces fetta

1/2 cup honey-roasted pistachios

FOR THE DRESSING:

1/4 cup olive oil

2 Tablespoons maple syrup

1 teaspoon Dijon mustard

1 Tbs Balsamic Vinegar

3 cloves of garlic, crushed

Salt to taste

DIRECTIONS:

1. Wash the arugula and pears.

2. Thinly slice the pears.

3. Make the dressing by mixing all the ingredients in a small jar.

4. Assemble the salad by adding the arugula first.

5. Then layer the pears, red onion, and pomegranate pearls.

6. Pour the dressing over the salad and toss gently.

7. Finish with feta if desired.
