You start by getting the Tofu ready! Make sure your tofu is well drained. IF I’m making this recipe I usually let the tofu sit out draining onto towels or paper towels prior to cooking it. The less liquid it has the better! Tear into large chunks and drizzle with tamari sauce. I use a low sodium version. It ends up being just the right amount of salty without too much sodium.

I then toss the pieces in tapioca flour and garlic powder. This will help crisp up the outside and get it crunchy when baked.

Bake in the oven till they turn crispy like this! Great texture and not the mushy tofu everyone usually dislikes. You can make the tofu like this for barbecue tofu, buffalo tofu, etc too.

While the tofu is cooking whip up your sauce with the fresh orange juice, ginger, garlic, etc. Get your side ingredients ready! Soon you will be ready to eat.

RECIPE

Orange & Garlic Tofu

INGREDIENTS

For the Tofu

2 packages of extra firm organic tofu ( well drained )

1/4 cup Tamari sauce ( low sodium)

1/4 cup Tapioca flour

1 Tbs garlic powder

For the Sauce

Juice of 2 oranges

1/2 cup Tamari sauce

1/2 cup of vegetable broth

1Tbs maple syrup

1Tbs coconut sugar

1 Tbs almond butter ( this is optional but it gives it an extra flavor)

1 Tsp orange zest

1 Tsp fresh ginger grated

1 Tsp red pepper flakes (optional)

3 cloves of garlic grated.

1 Tbs tapioca flour

2 heads of broccoli

2 cups of cooked brown rice. ( I like to have the rice prepared ahead of time) If not make brown in rice cooker. ( 2 cups of rice to 3 3/4 cups of water plus a pinch of salt)

DIRECTIONS

  • Preheat oven to 400

  • Drain tofu well prior to making the meal ( if you have time let it sit ahead of time on a towel to drain.

  • Break into large chunks. Try to not handle it too much so it doesn’t break more.

  • In a bowel add tamarin sauce

  • Line a baking sheet with parchment paper.

  • Very gently toss Tofu in the garlic and tapioca flour mix to evenly coat the pieces. If you need to toss each piece separately and then place on parchment paper.

  • Lay tofu in single layer on baking sheet. Bake at 400 for 20 min.

  • While tofu is cooking make your sauce. Mix all the ingredients minus the tapioca together and place on the stove.

  • Warm over medium/high heat until hot.

  • Steam your broccoli or vegetable of choice.

  • Once Tofu is done, set aside and let cool about 5 minutes.

  • Add Tapioca to your sauce and whisk while waring until it thickens.  You may add ore if you prefer a thicker sauce. I like for it to be poured over the Tofu not necessarily super thick.

  • Prepare bowel with rice and broccoli, add tofu on top and scoop generous amount of sauce over the tofu.

ENJOY! You can modify the amount of sauce you add to your liking! You can also serve the tofu over rice noodles.

Serves 4

Approximate time to make 30 minutes ( if the rice is already cooked prior!)
