Rich, Heart-Warming Wild Mushroom Risotto

Creamy comfort in a bowl! That's how I would sum up this mouth-watering wild mushroom risotto dish.

Risotto is the perfect heart-warming dish for fall and winter. This recipe will be a hit at any family feast or simply enjoyed cozying up on the couch. Serve it with a side salad, and you have a delicious meal!

Contrary to what many may think, risotto is actually fairly easy to make and not always that time-consuming! This yummy recipe will show you how easy it is to enjoy risotto at home and not only at restaurants!

WILD MUSHROOM RISOTTO RECIPE

Using the World Market® Porcini Mushroom Risotto mix and added mushrooms such as portobello and shitake really amplifies the mushroom flavor and add depth and richness to the dish.

Fresh herbs from the garden, including rosemary and thyme, complimented the mushrooms and gave this risotto that much-desired hearty, burst-in-your-mouth flavor.

This risotto mix is one for the books!

Prep Time: 10 min.

Cook Time: 30 min.

Total Time: 40 min.

Servings: 4-6

INGREDIENTs:

1 Jar of World Market® Porcini Mushroom Risotto or any 16-18 ounces of risotto.

Add a total of about 2 1/2 cups of water. Adding 1/2 cup at a time

8 oz baby portobello mushrooms, halved or quartered

8 oz shiitake mushrooms, halved

6 tbsp butter

Sprig of rosemary

Sprig of thyme

6 oz fresh parmesan, plus more for serving

1 Thinly sliced shallot to sauté with the mushrooms, optional

DIRECTIONS:

  1. Make risotto according to the directions on the back of the jar. Be sure to slowly add the water or white wine while cooking and have the liquid be hot when adding it (this will help not slow down the cooking process of the risotto).

  2. In a separate pan, melt 4 tbsp of the butter and add mushrooms and shallot, if using. Sauté for about 6-7 minutes until cooked through.

  3. Once the risotto is cooked, add the remaining 2 tbsp of butter and mix well.

  4. Add the fresh parmesan to the risotto and mix it in.

  5. Plate the risotto, top it with the cooked mushrooms, and add a generous amount of fresh parmesan.

  6. Top with fresh rosemary and thyme. Enjoy!

RISOTTO TIPS:

  • Arborio, Vialone, and Carnaroli risotto rice are great options to make the perfect creamy risotto.

  • A deep, big pot with a heavy bottom is perfect for risotto since it needs to simmer for long periods without burning.

  • Heat the stock in another pot and keep it warm in the meantime. To get a perfect consistency, it is essential to add the stock step by step and only when the rice has absorbed the last added liquid. If you use cold stock, you disrupt the cooking process and shock the rice, making it difficult to reach the desired texture.

  • Risotto should be stirred constantly to make sure the rice grains release their starch for that creaminess you are after.

  • Don't be afraid to have a heavy hand when it comes to the butter and parmesan; they are, after all, what makes a great risotto!

I served this risotto at a special family fall feast, and let me just say, it was a hit!
