A Refreshing Rosemary And Grapefruit Mocktail

Spring is in the air, so it's time to shake off the winter chill and celebrate spring!

A good mocktail is hard to beat, but this one is refreshing and fun for all to drink. It’s one of my favorites!

This delicious Rosemary and Grapefruit Mocktail is the perfect spring-gathering drink. Bursting with zesty grapefruit goodness and infused with the earthy aroma of fresh rosemary, it just embodies spring to me!

To make this refreshing mocktail, you only need a handful of simple ingredients—including fresh grapefruit juice, club soda, and a sprinkle of turbinado sugar.

I love this homemade rosemary simple syrup, which adds a touch of sweetness and depth to any drink it graces.

Whether you're mixing it into lemonades, drizzling it over cakes, or even spooning it over sorbet, I know you will love this syrup!

INGREDIENTS:

Rosemary Simple Syrup

  • 1 cup of water

  • 1 cup of sugar

  • 4 fresh rosemary sprigs.

For The Mocktail

  • 4 grapefruits, juiced (about 3 cups of juice)

  • 2 cups of club soda (you can use a lemon-flavored one for added flavor)

  • Turbinado sugar for the rim

  • Rosemary for garnish

  • Ice cubes

DIRECTIONS:

For the simple syrup:

  1. Place water and sugar in a small pot over medium heat, bring to a boil, and stir until the sugar is dissolved.

  2. Remove from heat and add the fresh rosemary sprigs. Cover the pot and let it sit for 30 minutes.

  3. Strain out rosemary pieces and the liquid is now your simple syrup.

For the mocktail:

  1. Juice grapefruit and set aside

  2. You may assemble the drink in a large pitcher and pour it or do it individually.

  3. Mix 2 parts grapefruit juice and 1 part club soda, plus 1 tablespoon of simple syrup per mocktail.

  4. Rim the glasses with turbinado sugar if desired.

  5. Finish with ice and a sprig of rosemary.

  6. It makes approximately 6 servings.
