The Most Delicious French Toast

With Valentines day approaching here is a delicious meal you can make and enjoy with our family ! It’s so delicious though you’ll probably want to enjoy it Valentines day and every day!

What’s more delicious than French Toast for breakfast! Valentines is the perfect time of year to make this! Not only is it plant-based but it can be made gluten free as well! An easy breakfast that is quick and the whole family will love.

I use some simple ingredients like coconut milk, ground flax seed, orange zest, and maple syrup.

I’m not kidding after I took this picture I smelled smoke and realized my hair had caught a little bit on fire.

INGREDIENTS

1 cup unsweetened coconut milk ( full fat canned) 

1/4 cup cornstarch

2 teaspoons pure maple syrup

2 teaspoon ground flaxseeds ( ground to a fine powder)

1.5 teaspoon vanilla

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

Zest of 1 orange 

6-8 slices thick sliced quality bread, such as ciabatta ( can use gluten-free as well) If you are using regular bread, toast it first lightly in the toaster to ensure it stays firm when cooking.  If using gluten-free bread lightly toast it and let sit out overnight so it’s dried out some before cooking. 

To Serve:

Maple syrup, powdered sugar, & fresh fruit

Instructions

1. In a shallow bowl (I like a pie dish)  whisk together the coconut milk, cornstarch, ground flaxseeds, cinnamon, baking powder, maple syrup and vanilla.

2. Add a little bit of vegan butter or coconut oil to a pan over medium-high heat and melt. Mix the batter again right before dipping bread ( sometimes the cornstarch will settle on the bottom ) It will be a  nice thick batter. 

3. Dip each side of the bread in the batter and let soak for about 10 seconds, then add the bread to the  greased pan and cook for 2-3 minutes on each side, until golden brown. Add more vegan butter/oil to the pan as needed in between pieces of bread. 

4. Sprinkle with orange zest! Serve with fresh fruit  and add maple syrup and powdered sugar if desired. 

Makes 6-8 servings.

Tips

Start with the heat on low, let the batter set onto the bread before flipping. Once toasted on both sides turn the heat up to brown. 

Use a non-stick pan and metal spatula
