Blue Garden Elixir: A Zero-Proof Drink for Slow Afternoons

There is a particular kind of pleasure in making a drink slowly and thoughtfully.

A handful of herbs gathered from the garden. Water brought just to a simmer. A spoonful of honey disappearing into a warm pitcher. Freshly squeezed lemon from the orchid.

The pause and the intention are part of it.

And this Blue Garden Elixir is exactly why I enjoy this drink so much.

It begins with butterfly pea flowers, small dried blossoms that release the most remarkable sapphire-blue color when steeped. Mint brings a familiar green freshness, while honey softens the edges. A little turmeric can be added for earthiness, and a pinch of sea salt seems to gather all the flavors together.

But the loveliest moment comes at the very end.

As the lemon meets the blue tea, the color begins to change. The deep blue changes into violet and then a luminous purple, moving through the glass like watercolor. It is a small bit of kitchen art—quiet enough that you have to be present to see it.

As Santerra is taking shape, we often turn to a simple question: How do we want people to feel while they are there?

Present enough to notice the landscape, the food, the people beside them, and perhaps even something within themselves that has been difficult to hear in the noise of ordinary life.

That intention affects everything.

It lives in the meals we prepare, the ways we move, the stretches of unhurried time, and the invitation to sleep deeply. It also shapes what we pour into a glass.

That’s why we have chosen to make Santerra an alcohol-free space. Not from a place of restriction, but from a desire for the experience to feel whole.

Alcohol can make us feel drowsy at first, but it interrupts the deeper, restorative rhythms of sleep. When rest and recovery are part of what we are tending, it feels natural for the drinks we serve to support that same rhythm.

There is also something creatively freeing about beginning with the garden instead of the traditional cocktail menu. It offers so much possibility!

Flowers can become tea. Herbs can be muddled or steeped. Citrus can brighten a drink gathered from the field. Seasonal fruit, spices, shrubs, sparkling mineral water, and a thread of local honey can make a glass feel celebratory without asking alcohol to be at the center of it.

Connection does not depend on what is poured. Neither does celebration. A beautiful drink can still celebrate the moment when everyone settles around a table, when a long afternoon becomes evening, or when conversation begins to deepen.

This elixir feels like a glimpse of that vision. It is refreshing and quietly surprising, with color borrowed from a flower and sweetness borrowed from bees. It indeed creates a moment of wonder!

Blue Garden Elixir (Zero Proof)

Makes 2 servings

Ingredients

  • 2 cups filtered water

  • 2 tablespoons dried butterfly pea flowers

  • 8–10 fresh mint leaves, plus more for garnish

  • 1–2 teaspoons raw local honey, or to taste, plus a little extra for drizzling

  • Juice of 1 lemon

  • ¼ teaspoon freshly grated turmeric, optional but wonderful

  • A small pinch of sea salt (I like Baja Gold)

  • Ice

  • Sparkling mineral water, optional, for topping

Method

  1. Bring the filtered water just to a simmer.

  2. Remove it from the heat and add the butterfly pea flowers. Cover and allow them to steep for 8–10 minutes.

  3. Strain the tea into a pitcher. While it is still warm, stir in the honey until dissolved.

  4. Add the grated turmeric, if using, along with a tiny pinch of sea salt.

  5. Gently press the mint leaves between your palms to release their fragrance, then add them to the pitcher.

  6. Let the tea cool, then refrigerate until cold.

  7. To serve, fill two glasses with ice and pour in the chilled blue tea. Add a squeeze of fresh lemon juice to each glass and watch the color shift from sapphire blue to violet-purple.

  8. Top with sparkling mineral water, if you like. Garnish with fresh mint and finish with the lightest drizzle of honey.

Serve it somewhere you can linger for a while. The color change happens quickly, but the kind of moment it creates does not have to!
